Chefs at various Fairmont Hotels are cooking with fresh organic herbs, picked from their own productive rooftop gardens. The hotels, across many continents, now have 28 gardens, organically farmed. The Fairmont Royal York Hotel in Toronto and the Fairmont Waterfront Hotel in Vancouver were the first to begin urban farming over 20 years ago. Chefs at other Fairmont hotels soon followed. In addition to herbs, many of the hotels include microgreens, composting and other features, with over 20 Apiaries and 18 wild bee 鈥渉otels鈥 at the various sites. What had started as an unusual practice by kitchen staff is now a standard practice across the company鈥檚 properties as illustrated in three of its Canadian hotels.
FAIRMONT ROYAL YORK HOTEL, TORONTO
In 1998, the 18th-story garden was created with 17 beds and 23 planter pots. These pots and beds contain a variety of herbs and vegetables such as lemon thyme, chives, rosemary, Italian red kidney beans, pear trees, sweet cherry tomatoes, and arctic strawberries. In the summer of 2008, their then Executive Chef David Garcelon also brought in a queen bee and her hive - now producing award-winning honey. There are also composters and a very small vineyard. The effort for setting up the herb garden earned an award from the city鈥檚 environmental program for successfully producing herbs for use in the hotel鈥檚 restaurant. Weekly visits in the summer season have even become an attraction, combined with afternoon tea.
FAIRMONT WATERFRONT HOTEL, VANCOUVER
The herb garden covers 195 m2 of the third floor terrace, and is located on the south side to obtain sufficient sunlight. The rooftop garden is an intensive system with annual food production estimated to be worth approximately $25,000 to $30,000. The site includes beehives and a bee hotel, and this is reflected in their restaurant. Their executive chef has developed a 鈥淏ee Sustainable鈥 menu for their restaurant that relies on food that requires pollination.
FAIRMONT THE QUEEN ELIZABETH HOTEL, MONTREAL
The rooftop garden on the building鈥檚 22nd floor was inaugurated for the summer 2011 season. They use the Biotop system of container horticulture, with watering and fertilizing through an automatic drip system. In planting the garden, Montreal鈥檚 first downtown hotel rooftop garden, the culinary team chose unique and colourful varieties of herbs, edible blooms, fruits, and vegetables. An urban market in the hotel continues their commitment to providing access to local, fresh, seasonal food.

Pour le chef-cuisinier David Garcelon, les herbes aromatiques sont faciles 脿 cultiver et id茅ales pour les balcons. Le jardin de l鈥檋么tel a 茅t茅 cr茅茅 en 1998 au 18猫me 茅tage, avec 17 plates-bandes et 23 pots qui permettent de cultiver aussi bien des herbes aromatiques 鈥 thym citron, ciboulette, romarin 鈥 que des l茅gumes comme des haricots rouges par exemple, ou encore des tomates-cerises, des baies arctiques et des poiriers. 脌 l鈥櫭﹖茅 2008, David Garcelon a 茅galement install茅 une ruche - plusieurs ruches produisent maintenant un miel prim茅. Le jardin est 茅quip茅 de composteurs et un tout petit vignoble y a m锚me 茅t茅 plant茅. Le jardin d鈥檋erbes aromatiques a re莽u un prix du programme environnemental de la ville, qui a salu茅 l鈥檌d茅e d鈥檜ne production employ茅e au restaurant de l鈥檋么tel. En 茅t茅, les visites hebdomadaires sont devenues une attraction.
LE FAIRMONT WATERFRONT 脿 VANCOUVER (CANADA)
Le jardin de l鈥檋么tel couvre 195 m2 de la terrasse du troisi猫me 茅tage, son orientation au sud lui permettant de b茅n茅ficier d鈥檜n ensoleillement suffisant. Il constitue un syst猫me intensif dont la production annuelle repr茅sente une 茅conomie de 25 000 脿 30 000 dollars canadiens (19 000 脿 26 800鈧).

Le toit-jardin au 22i猫me 茅tage du b芒timent a 茅t茅 inaugur茅 au d茅but de l鈥櫭﹖茅 2011. L鈥檋么tel a d茅cid茅 d鈥檜tiliser le syst猫me Biotop pour l鈥檋ydroponie, dont un goutte 脿 goutte permet d鈥檃rroser et de fertiliser automatiquement les plantations. L鈥檃m茅nagement de ce jardin, le premier sur le toit d鈥檜n h么tel montr茅alais, illustre la volont茅 de l鈥櫭﹒uipe de cuisine de voir les espaces verts conqu茅rir de nouveaux sommets avec la culture d鈥檋erbes, de fleurs comestibles, de fruits et de l茅gumes color茅s qui servent chaque jour 脿 fournir les cuisines et agr茅menter les diff茅rents espaces de l鈥檋么tel.
